Ingredients:

  • Raspberries

    12 oz
  • Onions

    1/2
  • Extra Virgin Olive Oil

    1 tbsp
  • Balsamic Vinegar

    1 tbsp
  • Dijon Mustard

    1 tsp
  • Salt

    to taste
  • Sugar

    1/8 tsp
  • Lemon Juice

    1/4 lemon

Cooking Directions:

Wash and clean raspberries and onion. Finely chop half onion.

In a non stick pan heat the extra virgin olive oil and saute the chopped onion until slightly caramelized.

At this point lower the heat to medium settings and add the whole raspberries.

Add salt and a pinch of sugar. Stir very well.

Drizzle the raspberries with balsamic vinegar and some drops of lemon juice.

Cook for an additional 3 to 4 minutes always stirring until the raspberries turn into a puree.

Turn off the heat, add a full teaspoon of Dijon mustard and mix well.

Let chill, transfer into a serving bowl and use it for seasoning grilled and roasted meat.


Tips:

Blend the sauce if a smoother texture is desired.
