Tilapia Tomato Soup - Recipe

Tilapia Tomato Soup is a creamy and yummy idea for a tremendous seafood entree. Served either as appetizer or main course, this easy tilapia cioppino soup will easily become one of your favorite fish meals.

Ingredients:

  • Tilapia

    4 fillets
  • Cherry Tomatoes

    1 lb
  • Tomato Paste

    6 oz
  • Oil

    2 tbsps
  • Garlic

    1 clove
  • Celery

  • Hot Habanero Peppers (optional)

  • Salt

    to taste
  • White Pepper Corns

    ground
  • Bay Leaves

    2 leaves
  • Nutmeg

    ground

Cooking Directions:

Rinse and clean the tilapia fish fillets. Cut the fillets in chunks about 1 inch wide.

Wash and cut the cherry tomatoes in halves, slice the celery and mince the garlic.

In a large pot heat the oil and quickly stir fry the minced garlic togheter with the chopped celery and the whole Habanero pepper.

Saute for 1-2 minutes until the garlic turns lightly brown but not burned.

At this point, add the cherry tomatoes and cook, stirring frequently, for about 5 minutes.

When the tomatoes are starting to wilt, add the Tilapia fish fillets in pieces. Saute until well seared.

Season with salt, ground white pepper corns, bay leaves, and ground nutmeg.

Add the tomato paste and about 3 cups of water. Stir well.

Cover and lower the heat. Let cook the tilapia tomato soup for about 20 minutes. Stir with a wooden or plastic spoon from time to time.

When the cooking time has passed, discard the whole Habanero pepper and add additional seasonings, if desired.

Remove from the stove top and transfer with a ladle the Tilapia Tomato Soup in serving bowls.


Tips:

If desired, serve with toasted bread and melted cream cheese as topping or with crackers.

You can substitute or add to the Tilapia different kind of fish such as cod, soles, halibut or snapper.
