Mix, with a pasta maker or the help of your hands, the ricotta cheese and the flour until you obtain an homogeneous dough with no lumps.
Form long logs with a diameter of about 1/3-1/2 inch.
Cut the log in small pieces of about 1/2 to 2/3 inches. Let enough room between the prepared gnocchi and flour them to avoid the gnocchi to stick together.
Cook in abundant salted water and drain them as soon as they are raising to the surface (about 2 minutes).
