Ingredients:

  • Tomatoes (large)

  • Red Bell Peppers

    3
  • Cucumbers (persian)

    2
  • Onions

    2
  • Garlic

    2 cloves
  • Bread

    1/3 lb
  • Vinegar (Balsamic white)

    1/4 cup
  • Extra Virgin Olive Oil

    3 tbsps
  • Salt

    to taste
  • Black Pepper

    to taste

Cooking Directions:

Wash, clean and cut in large pieces the tomatoes, the red bell peppers, the cucumbers, the onions and the garlic cloves.

Moist the bread with some vinegar mixed with water.

Transfer everything in a blender and blend until an homogeneous puree is obtained then transfer in a serving bowl. Dress with oil and season with salt and black pepper to taste.

Transfer in the fridge and chill for about 3 hours to allow the enhance the mix of flavors before serving cold.

Please note that the vinegar should be subtle and light.


Tips:

You can serve the gazpacho along with cubed veggies like cucumbers, tomatoes, bell peppers or with lightly fried bread.
