Cooking Directions:

In a sauce pan mix together the sugar, the salt and the unsweetened cocoa powder with a wooden spoon.

Slowly add the milk, mix well to avoid lumps and turn on the heat at low flame.

Add half of the butter and, stirring continuously, cook for about 2 minutes.

When the chocolate sauce is ready (an easy test is described below) remove from heat. Add the remaining butter and mix until you obtain a creamy, smooth sauce.

To test if the chocolate sauce is ready while cooking, fill a glass with water. With the spoon let drip in the water a drop of chocolate topping. If the drop doesn't break apart and keep its spherical shape the sauce is ready to be removed from the heat and skip to the next step. Otherwise, keep cooking for few more second and repeat the test until you succeed.

Use right away this chocolate topping sauce to top your gelato, your cake or your pastries and serve.
