Ingredients:

  • Passion Fruits

  • Yogurt (peach flavored)

    8 oz
  • All Purpose Flour

    1 1/2 cups
  • Eggs

  • Sugar

    1 cup
  • Unsalted Butter

    1/2 stick
  • Instant Yeast

    1 bag
  • Powdered Sugar (for icing)

Cooking Directions:

Cut each passion fruit in two halves and with the help of a spoon scoop out the pulp and the seeds.

Filter the passion fruit pulp using a strainer and save the juice.

The Cake

In a large bowl add the peach flavored yogurt, the flour, the sugar, the melted butter and the eggs. Add 1/2 of the Passion fruit juice. Add the yeast at the very end.

Mix all together until reaching the consistency of a smooth batter.

Grease with some butter and sprinkle with flour a baking pan and pour the batter in it.

Bake in the preheated oven for 25 minutes or until ready at 400F.

The Topping

Beat together the remaining passion fruit juice with the powdered sugar. You can use an electric beater to make this step easier. See the recipe on How to Make Homemade Water Based Glaze for additional instructions and suggestions.

Putting all together

Top the cake with the glaze, leveling it with the help of a spatula.

Let rest for one hour in the refrigerator or until the glaze is set before serving.


Tips:

You can use 1/2 a cup of passion fruit juice instead of fresh fruits.

You can substitute the peach flavored yogurt with plain one.

Add few seeds to the glaze to make your cake more appealing.
